With this one-pot recipe you are using only one pot, so less of a mess afterward.  This is super important for busy moms like me. You can sneak in those veggies too.  The kids won’t even notice…well maybe they will but they will love it I promise! Look at this deliciousness!

Super easy ingredients. All you need is some chopped onion,  garlic,  ham, your choice of pasta, some simple seasonings and your veggies. I used frozen organic vegetables.

Can I use fresh vegetables for this simple one-pot meal?

You can, but using frozen vegetables is just as great! I love using frozen vegetables because they’re really inexpensive and they taste great. I’ve saved so much money and time by using frozen instead of fresh. 

The vegetables are also versatile if you don’t have all three, just toss in one kind! The flavor will be there no matter what! The leftovers are really good, too.

What other cheese could I add to this recipe? 

If you’re a cheese lover like me, you’re never going to be able to add in enough cheese! This is what I love most about this recipe. Top it with parmesan and if that isn’t enough, add in some other cheesy choices like cheddar or pepper jack as well.

You can even have some shredded cheese set to the side so everyone can add in their own extras as they want.

Ingredients you’ll need for a healthy one-pot meal:

  • 2 cloves garlic minced
  • 1/2 cup diced onion
  • 2 Tablespoons olive oil
  • 2-3 cups of cubed ham
  • 32 ounces chicken broth
  • 8 ounces mini seashell pasta uncooked
  • 2 Teaspoons oregano dried
  • 2 Teaspoons basil dried
  • 1/2 teaspoon ground black pepper
  • 1/2 cup frozen corn
  • 1/2 cup frozen peas and carrots
  • shredded Parmesan cheese for topping

Directions to prepare the one-pot pasta recipe:

Step 1: heat the garlic

The first thing you need to do is heat your garlic, onion and olive oil up for about 3-5 minutes or until the onion begins to soften and become translucent.

Step 2: stir and heat

Then you will want to add your cubed ham, broth, pasta, oregano, basil, pepper, and vegetables. Stir well and heat until it comes to a boil.   Once it starts to boil, you are going to cover and heat for about 15-20 minutes, stirring occasionally, until pasta is cooked to your liking.

Step 3: add parmesan

Then top with as much Parmesan cheese to your liking. I love mine extra cheesy!

Conclusion

For this recipe, any onion can be used. You can use leftover ham from a ham dinner, or buy a ham at the deli counter and cube yourself or purchase it already diced. If you don’t have seashell pasta, use something else and adjust the cooking time accordingly.

Instructions

  • In a large skillet or pot, add garlic, onion and olive oil. Heat on medium for about 3-5 minutes or until the onion begins to soften and become translucent.
  • Add ham, broth, pasta, oregano, basil, pepper, and vegetables and stir to combine. Heat over medium high heat until it begins to boil. Reduce heat to simmer, cover and heat for about 15-20 minutes, stirring occasionally, until pasta is cooked to your liking.
  • Serve with shredded Parmesan cheese on top.
  • Serves 6-8
