Cupcake Instructions:

1. Begin by preheating the oven to 325 degrees F.

2. Line your 12-cup muffin tins with paper liners. Make sure you are using paper and not aluminum, as aluminum could make your delicate cupcake batter stick.

3. Whisk together all of your dry ingredients in a medium-sized bowl. This includes your flour, baking powder, baking soda, and salt.

4. Next, in a 2-cup liquid measurement cup, whisk together all of your wet ingredients, including the whole milk, sour cream, and vanilla.

5. In a stand mixer with the paddle attachment, combine your butter, sugar, and vanilla on medium speed until the mixture is light and fluffy. Don’t forget to stop every once in a while, to scrape down the bowl to gather up all the mix stuck to the sides.

6. Add in your egg whites and mix.

7. Then add half of your wet and dry ingredients and mix until fully combined. Scrape down the bowl as needed.

8. Add the second half of the wet and dry and mix on low until fully incorporated. Scrape down the bowl as needed.

9. Use a ¼ measuring cup or ice cream scooper to evenly portion out your cupcakes. Make sure that your mixture rests right in the middle of your cupcake liner. Too much will overflow while too little mixture will not bake evenly.

10. Bake your cupcakes for 20-22 minutes, until the tops spring back when touched. You can also try sticking a toothpick down the center and see if it comes out clean.
