- 2 tablespoons of baking powder
- 1 tsp white sugar
- 1 tsp salt
- 1 stick of salted butter
- 1 cup buttermilk
Preheat your oven to 425 degrees.
Combine flour, baking powder, sugar and salt in a large bowl. Slice cold stick of butter into 12 or more slices. Using a pastry cutter, cut butter into flour mixture until its crumbly looking. Add buttermilk and mix until a dough ball forms.
Turn dough out on to a floured surface. Roll into a rectangle. Using a glass or a biscuit cutter, cut dough into biscuits.
Place biscuits in a cast iron skillet. Make sure they’re touching. Bake for about 10 – 15 minutes.
When the tops are brown, brush with butter.
How To Prep the Spicy Chicken Tenders:
In a bowl, place chicken tenders and pour buttermilk over them. Let them rest for a few minutes.
Prepare the breading by adding flour, salt, pepper, garlic powder, cajun spices and paprika in a bowl and mixing it until well combined. Add buttermilk and stir with fork.
Take the spicy chicken tenders from bowl and place one at a time in your batter making sure to cover both sides well. Repeat with each chicken tender. Place on a plate.
Heat Vegetable oil in deep, large pot (to prevent popping and splatter) on medium heat. Once it’s hot enough that is sizzles if you drop a bit of batter into it, place chicken tenders in oil. Cook about 3 mins then use a pair of tongs to turn over for another 3 mins. Let drain on paper towels. Be sure the temperature of the chicken is 165 degrees.
