Ingredients
- 1 ¼ cup natural peanut butter
- ½ cup pure maple syrup
- 1 tsp. vanilla extract
- 1/8 tsp. salt
- ¼ cup coconut flour
- 1 tsp. coconut oil
- 1 ½ cups vegan chocolate chips
How to prepare the Peanut Butter Balls:
Step 1: Preparing the ingredients
Grab your large bowl and start mixing the peanut butter, the maple syrup, the vanilla, and a little bit of salt. When all of these are well mixed together, add the coconut flour and keep stirring using a wooden spoon. Place the mixture inside a fridge for two hours. If you are in a hurry, you can allow the batter to freeze for 30 minutes.
Take the mixture out of the fridge and grab a small cookie scooper (you can also use a spoon if you don’t have a scoop). Portion out 12 sections and roll them to form balls. Place them in the fridge for another hour or allow them to sit for 20 minutes inside the freezer.
Step 2: Melting the frosting
In a microwave-safe bowl, place the chocolate chips and the coconut oil. Set the microwave to high and place the bowl with the chips and oil inside for 45 seconds. Take the bowl out of the microwave and stir. Place it back in the microwave and heat it in 30 second increments, making sure you stir when every 30 seconds are up. Repeat this process until the chocolate is smooth.
Step 3: Preparing the balls
Take your balls out of the fridge and gently drive a fork through one of them. Dip it into the melted chocolate and place it on a parchment lined baking sheet to set. Repeat the process for all the peanut butter balls. You want to use a fork because this will allow the excess chocolate to drip back into the bowl.
Step 4: Serving & preserving
When all your peanut butter balls are dipped in chocolate, you want to leave them in the freezer before you serve them. They can be preserved between one week and three months as long as you keep them inside the fridge, in an airtight container.
Note: If you use a silicon mat to place the cake pops, it will allow them to retain their shape and prevents them from going flat.
