Peanut Butter Balls are an irresistible indulgence that combines creamy peanut butter with a layer of rich chocolate. These bite-sized treats are the perfect homemade sweet that will please any dessert lover.
Equipment:
- Small cookie scoop
- Microwave-safe bowl
- Large bowl
- Cake pop mold
Ingredients:
- 1 ¼ cup natural peanut butter
- ½ cup pure maple syrup
- 1 tsp. vanilla extract
- 1/8 tsp. salt
- ¼ cup coconut flour
- 1 tsp. coconut oil
- 1 ½ cups vegan chocolate chips
Instructions:
1. Start by mixing the peanut butter, maple syrup, vanilla, and a little bit of salt in a large bowl.
2. When all of these are well mixed together, add the coconut flour and keep stirring using a wooden spoon.
3. Place the mixture inside a fridge for two hours. If you are in a hurry, you can allow the batter to freeze for 30 minutes.
4. Take the mixture out of the fridge.
5. With a small cookie scooper (you can also use a spoon if you don’t have a scoop), portion out 12 sections and roll them to form balls.
6. Place the balls in the mold and put them in the fridge for an hour or allow them to sit for 20 minutes inside the freezer.
7. Place the chocolate chips and the coconut oil in a microwave-safe bowl.
8. Microwave on high for 45 seconds.
9. Take the bowl out of the microwave and stir.
10. Place it back in the microwave and heat for 30-second increments, making sure you stir when every 30 seconds are up. Repeat this process until the chocolate is smooth.
11. Take your balls out of the fridge and gently drive a fork through one of them, dip it into the melted chocolate, and place it on a parchment-lined baking sheet to set.
12. Repeat the process for all the peanut butter balls. You want to use a fork because this will allow the excess chocolate to drip back into the bowl.
13. When all your peanut butter balls are dipped in chocolate, you want to leave them in the freezer before you serve them. They can be preserved between one week and three months, as long as you keep them inside the fridge, in an airtight container.
Note: If you use a silicon mat, it will allow the peanut butter balls to retain their shape and prevent them from going flat.
