Aren’t blondies one of the best desserts that you can get? The buttery taste of sweetness with little hidden chunks of white chocolate. Can’t get much better than that, especially when you wash them down with a tall glass of fresh milk or a freshly perked coffee.

Blondies are also not as rich and heavy on the stomach as typically brownies or other types of squares, making them a favorite as a lighter dessert when your sweet tooth demands some attention. They can be hard to get in the store though and they aren’t always made using the best ingredients. This is especially true when you are sensitive or allergic to gluten. That is why today? We are going to learn how to make gluten free blondie squares that you can enjoy in the comfort of your own home!

What is Gluten?

Blondies Recipe

Gluten is the name for a particular protein that is found in numerous grains. Grains such as wheat, barley, and rye all contain gluten and these grains are used in a number of dishes. When you eat bread, pasta, pizza crusts, grain-filled cereals, and more – you are eating gluten. Those who suffer from celiac disease have a negative (and often painful) reaction to gluten and will avoid it all costs. Others can be allergic purely to gluten without having celiac disease or be quite sensitive to it – experiencing discomfort but not pain after ingesting it.

Symptoms include: bloating, digestion issues, fatigue, stomach issues, (diarrhea, constipation), weight loss that can’t be explained, and numerous others that are unique to each person.

Equipment Needed

  • Medium-large sized bowl
  • Whisk
  • 9×13” pan

Ingredients you’ll need for Best Gluten-Free Blondies

  • 2 cups almond flour
  • 2/3 cups brown sugar
  • ½ cup sugar
  • ½ cup butter – melted
  • 2 large eggs
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • ½ tsp salt
  • 1 ½ cup white chocolate chips

How to prepare the Best Gluten-Free Blondies

Preheat your oven to 350° before anything else – you want your oven to the right temperature before baking because trying to bake while the oven is preheating leads to uneven cooking times which can ruin the recipe.

Spray the 9×13” pan with a non-stick cooking spray or if preferred, lightly butter the dish to prevent the blondies from sticking as they bake.

Step 1: Mix wet ingredients

In the bowl, put the butter, brown sugar, the white sugar, the eggs, and the vanilla.

*after melting the butter, take caution and pay attention to where you are pouring it. You don’t want to pour it directly on top of the eggs as this could cause them to start to cook – which you definitely don’t want!

Whisk these all together until they are fully combined and no visible ingredients can be seen – just your mixture.

Step 2: mix dry ingredients

In a separate bowl, combine all the dry ingredients and stir together until mixed thoroughly.

Sift the dry ingredients into the wet ingredients while still whisking to ensure that they are fully absorbed into one another.

Step 3: Add chips

Stir together a final time using a rubber spatula or a wooden spoon.

*Changing from the whisk to the rubber spatula or the wooden spoon is highly, highly recommended as this mixture will be quite thick and sticky. Using the whisk runs the risk of the ingredients being stuck between the prongs. The spatula (or spoon) eases the incorporation between the wet and dry ingredients, allowing them to fully blend together.

Slowly fold in the white chocolate chips using the spatula spoon. Don’t stir too vigorously as it can break the chips up and cause the ingredients to separate.

Step 4: fill pan

Scoop out your mixture using the rubber spatula and transfer it to the prepared baking dish. Section out the mixture to prevent it from clumping together in the pan.

Once you have all the mixture out into the baking dish, use the flat side of the spatula or wooden spoon (the back) to smooth out the batter. Ensure that the bottom is completely covered and there are no visible holes.

*If easier, you can add the mixture into the dish in layer, smooth out each one, and then add another layer. This is to ensure that all the layers are smooth and will help it bake evenly in the oven.

Step 5: bake

Slide the dish into the preheated oven and bake for 30 to 35 minutes or until the top of the blondies are a golden brown (or blond color!). Remove from the oven, place on a cooling rack to set.
