Ingredients
1 1/4cupsall-purpose flour
1cuprolled oats
1/3cupbrown sugar
1/4cupwhite granulated sugar
1 1/2teaspoonbaking powder
1 1/2teaspoonbaking soda
1/2teaspoonsalt
1finely chopped apple
1cupapple juice
1tablespoonOlive oil
2eggs
2teaspoonsof cinnamon
1tablespoon butter
Instructions
Preheat oven to 400°F degrees.
Grease a muffin pan.
In a bowl whisk the flour, oats, brown sugar, salt, baking powder and baking soda.
Beat egg, oil, and apple juice in a separate bowl.
Add finely chopped apple and mix all together with wet and dry ingredients.
Fill mixture into the greased muffin pan and place in oven.
Bake for 15 minutes or until done.
Melt butter.
Using a pastry brush, lightly brush melted butter on top of muffins.
