I remember when I a little girl, my grandmother and I would walk every day, sometimes twice a day, down the long gravel road to the mailbox. Her driveway would seem like a mile long or more just one way. But it was special bonding time with her and as a kid walking with her didn’t bother me one bit. We would talk all the way there and back. But the fondest memory of these walks was stopping to check on her tomato garden. I remember like it was yesterday. She always hid a little ten foil of salt in the garden. We would pick out the juiciest red small tomatoes, dip them in the salt and eat them. We called these red beauties “Tommy Toes.” I could eat a hundred of those Tommy toes . I would never get tired of them.
One of my favorite new recipes is the Tomato & Basil salad. So because I love tomatoes and I love salads this recipe meets the best of both worlds. It reminds me of my grandmother’s tomato garden. Now that I am able to get my tomatoes fresh from my small tomato garden I can make this salad any day of the week for lunch or have for snack. Super easy to make and did I mention it is Paleo-friendly?
It’s so yummy!
Just a few simple ingredients is all you need.
Quarter your tomatoes, slice the onions and mix all together.
Add olive oil, vinegar, salt and pepper and mix well. Chop basil and add totomatos and stir.
Let set for about 15-30 minutes

Paleo Tomato Basil Salad
Ingredients
- 1 pint grape tomatoes
- 1 pint sunburst yellow tomatoes
- 1/2 large onion
- 6-8 fresh basil leaves
- 2 Tablespoons olive oil
- 2 Tablespoons balsamic vinegar
- salt and pepper
Instructions
- Quarter tomatoes and slice onions and mix together.
- Add olive oil, vinegar, salt and pepper and mix well.
- Chop basil and add to tomatoes and stir.
- Let set for about 15-30 minutes stirring occasionally.
You could also let this set overnight so the flavors really come out, making this a great make ahead salad for your next gathering!
