A Delicious Keto-Friendly Lasagna Meal

Not only do you still get the flavor and the seasoning from the meat and the mixture, but the zucchini slices replace the noodles, making it a totally Keto-Friendly meal and recipe! The best part? It truly does taste good! (Would I steer you wrong?!) The zucchini does an amazing job at replacing the noodles, that you almost wouldn’t know the difference if you didn’t know before taking a bite. Trust me when I say that this is an amazing healthy alternative that you need to add to your Keto recipe collection! One bite and you’ll be hooked. And with how healthy and Keto-friendly it is, you can eat and enjoy it as many times as you want!

Ingredients to make Keto Zucchini Lasagna:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 tsp. minced garlic
  • 1 C. marinara sauce
  • 2-3 medium zucchini, thinly sliced
  • 10 oz cottage cheese
  • 1 egg
  • 1 C. shredded mozzarella cheese
  • salt & pepper

Directions to make Keto Lasagna With Zucchini:

1. Preheat the oven to 350 degrees.

2. Lay the zucchini slices on paper towel and sprinkle with salt. Let sit for 15-20 minutes and then blot excess moisture with paper towel.

3. Brown the ground beef with the minced garlic and diced onion, drain the excess grease.

4. Combine the browned beef and marinara sauce.
5. In a small bowl, combine the cottage cheese and egg.

6. Begin layering the lasagna in an 8×8 or 9×9 baking dish in the following order: zucchini slices, meat sauce, cottage cheese mixture.

7. Repeat and then top the lasagna with mozzarella cheese.

8. Bake for 25-30 minutes.

9. Remove from the oven, let cool a few minutes. Serve with a side salad.
