While I don’t like to call the Keto lifestyle a “diet”, it is a little bit of a change of your eating habits – but for the better! Cutting out those carbs doesn’t mean that your days of eating delicious food are gone! Quite the opposite, actually.

It’s totally possible to have many of the dishes that you love in a “bowl” form and just remove out the wrap or tortilla/bread portion completely. Trust me when I say that this recipe will not disappoint.  After you try this Keto Chicken Enchilada Bowl, get excited because there are a ton more healthy Keto options that taste just as delicious as this one!

How To Make Keto Chicken Enchilada Bowl: 

1. Place the chicken breasts in a dutch oven (you could also utilize your slow cooker).

2. Season with salt & pepper. Add in minced garlic, diced onion and can of green chiles.

3. Pour the enchilada sauce and water over the chicken breasts.

4. Cover and cook over medium heat for 1 hour (if using a slow cooker, cook on low for 3-4 hours).

5. Remove the chicken from the dutch oven and shred. Place back into the dutch oven.

6. Cook the froze riced cauliflower according to the package directions.

7. Serve the shredded chicken over the riced cauliflower and top with your favorite low carb toppings.

Ingredients

  • 3-4 medium boneless skinless chicken breasts
  • 2 - 10 oz packages of frozen riced cauliflower
  • 10 oz can of enchilada sauce
  • 2 tsp. minced garlic
  • 1/2 C. water
  • 1 small onion diced
  • 4 oz can of green chiles
  • Salt & pepper
  • Toppings - shredded cheese jalapeno slices, avocado, salsa, tomatoes and sour cream
